New Year Chap Chye, something very traditional, soft mixed assorted vegetables - cabbage, woodear mushrooms fried, Mungbean thread noodles (Dang Hoon), curd with dried shrimps and garlic for aromatics rounding off with fermented beancurd.

The Low family’s Fu Zhou Nian Gao 福州年糕 characterised by yam slices, dates in red sugar. Not your usual sticky Nian Gao, and we adjusted for sweetness, this is a nice soft Nian Gao with light crunches of dates and yam within.

Tempura Nian Gao is Nian Gao wrapped with spring roll skin and then deep fried. Please note to keep the tempura Nian Gao nicely spaced out to keep its crunchy flavour. You can also put it shortly in the oven to give it a little toast before serving. Ask us for details!

This dish (Truffle Chicken) was created during our most recent trip to Kuala Lumpur in November. Chef David’s cousin, another Chef Low, operates a 2 generation restaurant in Bangsar, Kuala Lumpur (please check them out if you are in the area!).

It was the first time the cousins sat together to discuss this interesting combination of abalone, chicken, truffle and the secret sauce. Watching the two of them deep in conversation for the whole hour was fascinating, you know the essence is being discussed, and each chef will interpret it in their own ways to create dishes unique to their training, experience and background.

In line with Chinese New Year; where family ties are celebrated and revered, we share with you a family creation.

Just a side note, not your usual truffle overload but this nice fragrance that comes with complex textures of baby abalone and chicken.

The only dish from Cloud Nine’s regular menu that has made it overseas. We cooked this in Melbourne for friends in 2022 and New York City for the public in 2023, and it was so well received that we were so proud.

So proud because we took our claypot and brought it to the world, but also how it encouraged learning and insights into food not typically eaten in those parts of the world. And also how we made new friends through this process!

So it will continue to be a part of Chinese New Year, in our delivery menu and as ala carte!

Every Chinese New Year, we prepare to make the Foo Chow Nian Gao, 福州年糕, using a 3-generation recipe from Chef David’s family.

In our first New Year, Channel 8 came by our home to film the process of making the Nian Gao, and we also asked David’s mother to join the filming.

Much of our heritage and inheritance are intangible, and the effort in making this year on year, is a part of sharing the declining trade of hand making food from scratch. We will be posting a video on how to cook the Nian Gao soon, and may we all remember the purpose of a festival than the socially constructed expectations!!! 😊

“Why no Pen Cai?!?” “My mother has been asking about it for the whole week!”

It is such a funny but also heartwarming moment but luckily Peiyi didn’t choke （喷饭）on her dinner as she is concurrently posting while eating 🤣

Yes yes, we are definitely going to continue with our Pen Cai this year!

It’s here, it’s here! We have taken a good break and now ready to welcome the Year of the Dragon! This year we would like to discuss two dishes that we are putting up on menu:

1. New Year Chap Chye
2. Chef Low’s Truffle Chicken with Baby Abalone

Peiyi always loves a very hearty dose of vegetarian Chap Chye for every new year. There’s a festivity that comes along with vegetarian food on the first day of new year and it was warm and comforting on a busy new year morning. Yet it took on a bigger meaning when she missed home in her first months in New York and when she visited the Manhattan Chinatown, Chap Chye was the first set of ingredients that she was able to put together with some guidance from friends. Chap Chye’s flavours can only get better in the immediate days after cooking, and so makes for great dish to be shared over many gatherings. The Chap Chye was one of the dishes that she had used to build community in a new space in a new world.

The Truffle Chicken with Baby Abalone is a Low family’s dish, inspired during our recent milestone trip to Kuala Lumpur where the other Chef Low (Chef David’s cousin) operates a two generation restaurant in Bangsar. How do you honour the fungi truffle with chicken in a way that integrates beautifully but not overwhelms, the two chefs had a long discussion over this dish and this is our Chef David’s interpretation of the dish to celebrate family and connections.
